- 1 cup maida/all purpose flour
- 1 cup wheat flour
- 1 pinch turmeric powder
- 1/2 tsp salt
- 2-3 tsp oil

- 1 cup chana dal
- 1 pinch turmeric powder
- 1/2 tsp oil
- 1 cup jaggery
- 1 tsp cardamom powder
- as required nutmeg powder
- For making Poli-
- As required ghee/oil
Steps to make to make Maharashtrian Puran poli
- For dough-Take maida and wheat flour into a dish add pinch of turmeric and salt to taste. Knead a soften dough with sufficient water do not make the dough thick..the dough should not be thick at all..spread oil and knead the dough soft and nice, transfer the dough into a bowl, spread some oil over it and cover them and keep aside for 1 hour..the more u knead and rest the dough, softer the puran poli will be.
- For Puran -Take chana dal and wash it 2-3 times. soak dal in enough water for about 7 to 8 hours...now transfer soaked chana dal into cooker add sufficient amt of water, add turmeric powder, oil & mix well..close lid & cook dal on medium heat until 5-7 whistle..do not cook dal on high flame. Strain the excess wather...mash the cooked dal really well with potato masher. add jaggery and turn on gas.. Cook dal on medium heat for about 15-20 minute or until it thickens up really good
- Turn off gas and add cardamom and nutmeg powder and mix well. Our Puran is ready
- For making puranpoli. Take the dough and knead it once more for soft and nyc..take small ball of dough and dip in to dry flour,make pari as we roll while making modak..the pari should be thin at the edges and thick at the center stuff puran and close pari from all side. Remove excess dough if any..roll the poli evenly..heat up the pan transfer poli on pan roast from one side, spread ghee on it flip the poli and do the same. When poli IS roasted from both the side take it off the pan.
