  3. 1 cup Boiled and mashed potatoes

  6. 1 tsp Turmeric powder
  7. 1 tsp Chilli powder
  8. 1 tsp Ginger garlic paste
  9. 1/4 tsp Hing/ asafoetida
  10. 1 tsp Coriander powder
  11. to taste Salt
  12. 1 tablespoon Lemon juice
  13. For outer dough:
  14. 2 cups Whole wheat flour
  15. 1 cup Besan
  16. as per taste Salt
  17. 1 tsp Ajwain or caraway seeds
  18. as required Water to mix dough 3/4 cup or a little moreapproximately

Steps to make to make Carrot Paratha (Gajar ka Paratha)

  1. First to prepare Stuffing, heat oil in a pan. Pop cumin, add hing, ginger and garlic paste and stir well.
  2. Then add grated carrots, turmeric powder, chilli powder, coriander powder and mix well. Keep flame low to medium.
  3. Then add potatoes and mix well. Add salt, sprinkle water and cook covered for 2 to 3 minutes.
  4. Remove from flame and mix in lemon juice, coriander powder and cool the stuffing.
  5. Now prepare the dough using the given ingredients. Then let it set for 10 minutes.
  6. Prepare equal sized balls from the stuffing. Then prepare a little bigger sized balls from the dough.
  7. Stuff the filling in the dough balls and roll out parathas. Keep the thickness as per your liking. Now roast the parathas on hot griddle from both sides till golden brown and crisp. Use a tsp of oil for each.
  8. Serve delicious, hot carrot Parathas with pickle, curd or chutney and enjoy!
