- 1 cup Maida
- 1 Tbsp oil
- as per taste Salt
- as required Adequate water to knead the dough

- For Aloo Dum
- 5-6 medium sized potatoes
- 1 Tbsp mustard oil
- 1/2 tsp cumin seeds
- 1 whole red chilli
- 1 bay leaf
- 2 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 2 green chillies
- 1/2 cup water
- as per taste Salt
- as required Ghee to drizzle
- as required Whole garam masala
- For Chola’r Dal
- 1 cup Bengal Gram Dal
- 1 whole red chilli
- 1 tsp cumin seeds
- 1 tsp whole garam masala
- 1 medium size potatoes
- 3-4 coconut slices
- 1/2 tsp turmeric powder
- 1 Tbsp raisins
- as per taste Salt
- 1 Tbsp ghee
- For Tomato-Dates Chutney
- 3 medium size tomatoes
- 1/4 cup dates deseeded and sliced
- 1 Tbsp mustard oil
- 1/2 cup sugar
- 1 Tbsp lime juice
- 8-10 cashew nuts
- 1 whole red chilli
- 1 bay leaf
- 1 tsp cumin seeds
- 1 Tbsp roasted cumin-coriander-whole red chilli-fennel seed powder
Steps to make to make Luchi,Aloo Dum, Cholar Dal Chutney
- For Luchi - in a bowl add the Maida, oil, salt and with adequate water make a dough. Rest covered for 5 mins. Make lemon size balls, roll it out with rolling pin small sizes. Heat oil in a wok and fry 2-3 at a time. When frying the Luchi’s will puff up. Set aside and complete the batches
- For Aloo Dum - wash potatoes and in pressure cooker for 3 whistles on medium flame boil the potatoes. Set aside when depressurised and peel the skin. Set aside. In a wok heat mustard oil, add cumin seeds, bay leaf, whole red chilli and add the potatoes. Fry for 4-5 mins.
- In a separate bowl add cumin powder, coriander powder, red chilli powder and 1 Tbsp hot water. Make a slurry and add to the potatoes. On medium flame cook the potatoes. Add salt and slit green chillies. Add 1/2 cup hot water and cook covered for 3-5 mins. Once water level refuses little, add whole garam masala and drizzle ghee. Set aside
- For Chola’aur Dal - soak Bengal Gram Dal in a bowl for 15 mins. Discard the water and add to a pressure cooker and add enough water to reach 1†above the Dal. Without having the lid on it, boil until half done. Add turmeric powder, salt and stir. Set aside
- In a separate wok add ghee, cumin seeds, whole red chilli and add the Dal. Cook until well done. Set aside. In a separate wok heat 1 tsp oil and fry the potatoes (wash, peel and make 1/2†seize pieces). Add the fried potatoes to the Dal. Take coconut slices and cut into small pieces and add to the Dal. Add Raisins too. Dal is done
- For Tomato-Dates Chutney - chop the tomatoes fine. Deseed the dates. In a wok heat mustard oil and add cumin seeds, whole red chilli and bay leaf. Add chopped tomatoes and stir for 1 min. Add salt and stir and cover for 4-5 mins until tomatoes softened. Add dates and sugar, stir well. Add lime juice and stir for 2-3 mins. Add roasted cumin-coriander-fennel seeds and whole red chilli powder. Add cashew nuts and cover and Chutney is done
