This is a classic spiced Indian potato paratha made from boiled potatoes popular in Punjab.
Traditionally these parathas are cooked in ghee & had a dollop of butter.

- 2 cups wheatflour
- 2 tsp refined oil
- 1 cup water to knead
- For Aloo stuffing
- 2 potatoes boiled & mashed
- 1/4 tsp Kashmiri red chilli powder
- 1/2 tsp coriander seeds(crushed)
- 1/4 tsp cumin powder
- 1 green chilli chopped
- 1/2 tsp amchur powder / dry mango powder
- 1/4 tsp ajwain/ carom seeds
- to taste Salt
- 1/2 tsp ginger paste
- 2 tbsp coriander finely chopped
- Other ingerdients-
- 1/2 cup wheat flour to dust
- 2 tbsp ghee
- 1 tbsp butter
Steps to make to make Aloo Paratha
- Knead wheat dough by taking 2 cups wheat flour, 2 tsp refined oil, 1/2 tsp salt & 1 cup water.
- In a large mixing bowl take 2 boiled & mashed potatoes.
- Add red chilli powder,turmeric,cumin, aamchur powder, ajwain, ginger paste, chopped coriander leaves, salt & mix well.
- Pinch a ball sized wheat dough & dust with some wheat flour.
- Roll it in a circular, then stuff the potato stuffing in the middle by making a whole & roll slightly thick
- Fry the parathas with ghee still brown.
- Serve hot with butter,kashmiri dum aloo & kesar pista Srikhand.
