  1. Dough
  2. 2 cup gram flour
  3. 3/4 cup all-purpose flour
  4. 1/2 cup wheat flour
  5. 2 tablespoon oil
  6. to taste Salt
  7. 3/4 cup water
  8. For filling
  9. 20 green chillies
  10. 2 inch ginger
  11. 15 garlic cloves
  12. 150 gram roasted groundnuts
  13. 8 tablespoon sugar
  14. 1.5 cup desiccated coconut
  15. 3 tbsp poppy seeds
  16. 5 tbsp sesame seeds
  17. 3 tbsp fennel seeds
  18. 3 tbsp red chilli powder (medium spicy)
  19. 1 teaspoon turmeric powder
  20. 1 tbsp garam masala
  21. 2 teaspoon salt
  22. 3 tbsp lemon juice
  23. 2 tbsp milk
  24. 1 tbsp sugar
  25. as needed Oil to fry

Steps to make to make Bhakarwadi

  1. Add gram flour, all-purpose flour and wheat flour to a bowl along with salt and oil. Mix everything well. Start making the dough by adding a little water at a time. The dough should be little stiff. Knead the dough for 3 to 4 minutes. Now cover and rest it for 15 to 20 minutes.
  2. In a pan, dry roast sesame seeds, fennel seeds and poppy seeds. When it cools down grind it to a powder. Grind roasted peanuts to a powder. Add desiccated coconut and sugar together and grind it also into a powder. Take all these things in a bowl. Grind ginger, garlic and green chilli to a paste. Now add ginger, garlic and green chilli paste to it. Add turmeric, red chilli powder, garam masala, salt and lemon juice.
  3. Mix all the spices well and give it a good mix. In a small bowl, take 2 tbsp of milk along with one tbsp of sugar. This will be used to apply while making bhakarwadi.
  4. Now knead the dough again for 3 to 4 minutes and then divide it into 6 equal portions. Take one portion and roll It out into 8 inch diameter circle. Now I apply prepared milk and sugar mixture all over and put the filling on top leaving the edges. Level the filling. Now start rolling it from the side near you going upward.
  5. Roll it tightly and stick the edges nicely. Then cut the edges of the roll with a knife. Now cut the roll into pieces and press each piece lightly facing cut side up with your palm. Prepare all the bhakarwadi in the same way.
  6. Heat oil in a pan on medium heat. Add 6 - 8 bhakarwadi at a time and fry it on medium to low heat until golden brown in colour. Do not fry it on high heat otherwise it will get burnt on top and it will not cook from inside. Fry all the bhakarwadi in the same way. Let it cool down completely and store in an airtight container.
  7. Bhakarwadi can be served as a snack with tea or coffee.
