  14. 2 tsp oil
  15. 6-8 curry leaves
  16. 1 tsp Cumin seeds
  17. 2 Tbsp dry red chilli powder
  18. For naan-
  19. 2.5 cups plain flour
  20. 1/2 tablespoon salt
  21. 1 tbsp curd
  22. 1/2 tsp baking powder
  23. 1/4 tsp baking soda
  24. as per taste Warm Water to knead the dough

Steps to make to make Tandoori Aloo

  1. For vegtables
    Boil 7-8 baby potatoes for 5 whistles
    Peel them and deep fry in oil in a medium flame
    1 cubed onion with layers seperated
    1/2 cubed capsicum
  2. For marinade
    4tbsp hung curd
    2 tbsp chickpea flour
    2 tsp garlic paste
    Salt acc to taste
    2 tsp red chilli powder
    1/2 tsp turmeric powder
    1 tsp aamchur powder
    1 tsp garam masala
    1 tsp roasted cumin powder
    1 tsp kasuri methi
    Finely chopped coriander
    Mix all well with a beater
  3. Toss all vegetables in the marinade
    Refrigerate for 15-20 mins
  4. In a pan add oil,cumin seeds and curry leaves
    Add the marinated vegetables and saute well for 5 mins on a slow flame
    Heat a peice of charcoal till it turns white
    Place it in a small dish in the centre of the pan. Pour hot ghee over it.
    You will see smokes coming out
    Immediately cover it with a lid
    Let it rest for 10-15 mins
  5. Now poke these potatoes onion and capsicum on skewers
    Let the gravy remain
    Place the skewers on a grill pan or a grill plate
    Heat on a high flame till the potatoes turn brownish
    They are now properly grilled
  6. At this stage you can even serve these as starters
    Since it was our lunch,I prepared a gravy

    In a pan again heat oil.
    Add the gravy which was remaining
    Add very little water
    Add dry red chilli paste(I always make it and store it in my freezer) to give the bright red colour
    Add the potatoes onion and capsicum from the skewers
    Blend well
    Garnish with coriander

    Serve hot with tandoori butter garlic naan
  7. For tandoori butter garlic naan

    Recipe
    2 &1/2 cups plain flour
    1 tsp salt
    1 tbsp curd
    1/2 tsp baking powder
    1/4 Tsp baking soda
    Warm water to knead dough
    Knead a soft dough and let it rest for minimum 2 hours
    By then it will swell in size
    Roll oval shaped rotis on a rolling pan
    Apply water on one day de
    Place the water side on the griddle
    Once it starts browning turnn the griddle upside down and let the other side cook till then and automatically falls away from the griddle
  8. Coat with a layer of melted butter in which garlic, chopped coriander and onion seeds (kalonji) have already been added
