Instructions to make to make Raj kachori
- First in a large mixing bowl add semolina, oil, salt and mix well. prepare smooth and stiff dough by adding water as required.keep aside to rest about 15 mins.
- Now knead the dough again and divide it into equal portions.take a portion of dough and roll out little thick puri using little flour for rolling.
- Heat the oil in the kadhai at a high flame and then reduce the heat.deep fry all the puris until crisp and nice golden in colour. remove on paper napkin and keep aside to cool completely.
- For filling - combine the boiled moong, channa, potatoes,salt in a bowl and keep aside.
- Make a hole in the centre of the kachori and Stuff with 2 tbsp of filling mixture.
- Now add beaten curd, green chutney, tamarind chutney over it.
- Sprinkle some sev on top, garnish with pomegranate seeds, crispy boondi, finely chopped onion and fresh coriander.
