  3. 1/4 th tsp ajwain

  1. First we will make the dough. For that in a bowl, add maida, some salt, kalounji & ajwain. Mix it, now gently add water & knead it into a semi-soft dough, as shown in the image below. Now cover the dough with a damp cloth and rest it for about an hour.
  2. Soak chana dal for an hour then adding little water so that the chana dal gets soaked, wait till 4 to 5 whistles until it gets boiled. Now grind it into a smooth paste.
  3. Now heat a pan, add some oil then add hing and grated ginger in it. Let it saute for about 30 seconds then add the chana dal paste in it. Mix everything well and let it cook for 2 to 3 Mims on medium flame.
  4. Then add sauf powder in it and mix it well with the mixture then add some sugar and salt and mix it; refer to the measurements above in the ingredients section. Now cook it until the water is dried out and it gets lumpy and starts leaving the pan. Now switch off the gas.
  5. Now make small balls out of the dough and put 1 tsp of chana dal mixture into the ball and cover & seal the edges of the ball. Do the same with the rest of the balls. Now sprinkle a tbsp of oil over the balls so that it doesn't gets sticks to each other.
  6. Now roll each one of it into a thick puri, by giving it a gentle pressure, as shown in the image below. Now heat some oil in a kadai, for deep-frying. Once the oil gets hot, fry the puris, one but one.
