  4. 1/2 tsp baking powder

  9. Sugar syrup
  10. 1 cup Sugar
  11. 1 cup water

  13. 1 cup Grated khoya
  14. 1/2 cup sugar
  15. 1 tsp crushed Cardamom
  16. as required Few saffron strings

Instructions to make to make Labang Latika

  1. For preparing dough, mix flour, baking soda, baking powder, pinch of salt. Add ghee and refined oil and mix thoroughly. Add water to make dough of medium hardness.
  2. Cover the dough and keep it aside for 15mins.
  3. For filling, take grated khoya in a kadhai and cook it in low flame until it melts. Add sugar and crushed cardamom into it and saute for 2-3 minutes more so than sugar gets absorbed and turns golden brown. Remove the kadhai from the flame and allow it to cool. Add crushed saffron strings to enhance flavour.
  4. Next, prepare sugar syrup with sugar and water. Boil sugar syrup till it is one string consistency.
  5. Divide dough into 8 portions and prepare smooth round balls from it.
  6. Roll each ball into round thin circles having 5"diameter. Put a portion of the filling at the center. Fold two sides overlapping each other.
  7. Flip it to the other side. Then fold top and bottom with one side over the other.
  8. Seal the joint with a Clove. In a kadhai, add ghee or oil for frying. Cook the labang Latika in medium low heat from all sides till it becomes golden brown.
  9. Add all the labang Latikas to the medium hot sugar syrup.Flip all the sides including top and bottom so that all are coated evenly with sugar syrup.
  10. Remove the labang Latika and collect on a plate to make it cool and dry. Now they are ready to serve.
