Instructions to make to make UP Special Samosa
- To make stuffing heat a pan with oil. Add cumin seeds and allow to splutter.
- Add the green peas and saute till rawness is gone.
- Add chopped potatoes, re d chili,mix well. Mix salt and turmeric and cook covered till half done.
- Add pounded coriander and fennel seeds, amchur powder and ginger powder, mix well.
- Mix chopped coriander and mint leaves and cook till the potato masala is done. Set aside to cool down.
- To make dough, mix all the dry ingredients. Add water little at a time to make a dough like that of Poori.(neither so hard or soft)
- Cover and give rest to the dough for 15 minutes. Make balls of dough.
- Made normal samosa, Patti samosa and round samosa. Round samosa is my own discovery.
- Heat oil to deep fry. It shouldn't be more /less heated. Keep the flame in medium to low.
- Cook all sides of samosas till light brown and crispy. Enjoy with tomato chutney.
